A crisp-edged, lemony chicken dinner for the nights when you want something useful and a little bit celebratory.

Ingredients

  • 6 boneless chicken thighs
  • 1 lemon, thinly sliced
  • 2 tablespoons olive oil
  • 2 garlic cloves, smashed
  • A handful of soft herbs
  • Salt and black pepper

Method

  1. Heat a large oven-safe skillet with the olive oil. Season the chicken well.
  2. Sear the chicken until deeply golden, then turn it over.
  3. Tuck in the lemon and garlic, then finish in a hot oven until the chicken is cooked through.
  4. Scatter with herbs and bring the pan to the table.

Notes from the kitchen

Use a skillet large enough to give the chicken room.

A spoonful of yogurt or a simple green salad is a good partner here.
